Pizza – Lil Boo Style – Allergen Free

Updating Post 02-10-2010 -  for an entry at Savor the Thyme – Food is Love and the Naptime Chef contest!  I want CHOCOLATE!! Actually this post is for the kid-centric portion of the contest.  This shows that, first not only how much I love my lil boo (which you all know), but also that I know no boundaries to the extent I will go so he may enjoy the many ‘delightful’ foods we all take for granted.  Side note: I am the world’s WORST cook/baker etc and I actually did do this along with the help of lil boo!  Cheers Jennifer!!!

Who does not love pizza??

Silly question I know….

I am a pizza freak!  Yes, freak!  So, the other day while shopping at Whole Foods with lil boo, we saw that Namaste Foods makes a Gluten Free Pizza Crust Mix (also free of: wheat, soy, corn , potato, peanuts, tree nuts, dairy, and casein – all of which lil boo is allergic).  Fantastic!  While the mrs. is away, daddy-o will try his hands at cooking/baking!

The most important aspect of all this to remember that finally lil boo may enjoy pizza without any type of reaction.

The Goods:

  • One Bag of Namaste Foods Pizza Crust Mix
  • Rice Cheese by Galaxy Foods (be sure to read the label – some brands have casein)
  • A jar of pizza sauce (again read the label for ingredients)
  • Water
  • Oil

Directions:

(taken right from the Namaste bag)

  1. Prep – Heat over to 450 F.  Place rack at lowest position.  Spray a large pizza pan with non-stick spray. (note: I did not have a pizza pan as you can tell from the photo above, also the crust may rise…so make sure the rack above is high enough *whoops*)
  2. Mix – Combine 1 1/2 cups pizza crust mix with 1 teaspoon oil and 1 1/4 cups water.  Beat with electric mixer (I did it by hand and had lil boo help – I think he appreciated it more) for 3 minutes.  Batter will be the consistency of cake batter.  Scrape batter onto pizza pan and spread with spatula.  Spread at least 14 inches.
  3. Bake – Bake for approximately 20 minutes on lowest rack.  Pull the crust out and add sauce and toppings, then back an additional 10-15 minutes.
  4. EAT!!!

It was that simple.  Lil Boo devoured his pizza, without any reactions!!

Now I must thank the mrs. for finding the Namaste brand, they make an abundance of products that are allergy friendly and easy to make.  I am by no means a chef/cook/whatever and this was very easy to make!

Also, note I am not sponsored/paid by or have been given any product by Namaste or Galaxy Foods, this is purely my own doing as for once now lil boo can enjoy a array of foods, of which in the past he was not able too.  (Though if Namaste or Galaxy Foods would like to offer anything, I would gladly accept!! :o )

With tomorrow being Saturday, lil boo and I are going to try out the Waffle/Pancake mix with our new waffle maker we picked up!  This should be fun!  Cheers!
