NatureSweet Eclipses

Being from Arizona, it’s tough to grow tomatoes in your garden. I’ve tried time and time again to no avail. When I found out about NatureSweet Eclipses being locally grown in Arizona I had to give them a try! Who doesn’t enjoy a nice hearty tomato deep in flavor?!

I made a few snack plates. First one is a quick and easy plate. Just slice up the tomatoes, drizzle some extra virgin olive oil and white lemon balsamic vinegar with chopped garlic and some Italian herbs. Seriously simple and delicious is the key here.

Next, is all the rage. Toast a slice of Russian rye, spread some goat cheese (or cream cheese if you’re not a fan), make an avocado spread (mash an avocado, nothing technical) and slice an Eclipse to top it off.

You can’t go wrong and they are easy to slice! If I can do it, so can you!
