Funky Monkey Snacks Give-A-Way Contest

You have heard me RAVE about Funky Monkey Snacks lately, especially with all of Lil Boo’s allergies.  The Mrs. happened to find these GREAT snacks at Whole Foods, to which lil boo thoroughly enjoyed!  Of course, I am certain you could only imagine his two ‘favorite’ snacks out of the bunch…Bananamon and Purple Funk….both with Banana’s….do we see a pattern here??

    Melt some chocolate, dip in a banana on a popsicle stick and freeze it. Yum. (and easy!)

  2. My little dude loves banana smoothies – vanilla yogurt, banana, ice and a few dashes of cinnamon.
    Easy peasy and oh so yummy!

    The purple funk one sounds delicious. It’s funny because I’ve recently been trying to find new/more nutritious things for Vincent to eat and these sound like they’re worth a try for sure.

    I hope you don’t want to actually SEE the finished product because I’m on a diet right now and I can’t eat it.. boohoo.

    Banana Creme Pie

    Instant French Vanilla pudding
    Instant Banana pudding
    Ready made graham cracker crust put in the oven for 5 min or so.
    Bananas/sliced/dipped in lemon juice to prevent discoloration and placed inside w/ the pudding and on top of the “pie”
    Whipping Cream. The real stuff only!
    Voila.

    I’m not much of a cook so this is easy and delicious.. just not very healthy :(

    Alrighty, we love bananas in our house! So I’m following FunkyMonkey on Twitter and I’m a fan on FB and here’s my recipe for: Banana Creme Crepes! Hope I win!!!

    Ingredients:
    12 dessert crepes, purchased or homemade
    3/4 c. sour cream
    1 pkg. (8 ounces) cream cheese
    3 tbsp. granulated sugar
    1 tbsp. vanilla extract
    1/4 c. chopped pecans
    6 medium bananas
    1/2 c. light brown sugar, packed
    1 tsp. ground cinnamon
    1/2 c. butter
    juice of 1/2 lemon, about 1 to 1-1/2 tablespoons

    Preparation:
    Combine sour cream and cream cheese; mix until well blended and smooth. Add granulated sugar, vanilla and pecans; blend well. Spoon cream cheese mixture evenly on the crepes and roll up with the ends left open. Place on a shallow serving tray. At this point, the prepared crepes may be refrigerated. Bring to room temperature before serving.

    Peel and slice bananas crosswise into approximately 1/2-inch thick rounds; arrange in a casserole. Combine brown sugar and cinnamon; set aside. Melt butter and pour evenly over bananas in casserole. Sprinkle with the lemon juice and tope with the brown sugar-cinnamon mixture. Bake at 350 degrees for 20 minutes. Remove from oven and spoon bananas with spiced syrup over the crepes. Serve immediately. Serves 6.

    My favorite way to use bananas isn’t a recipe, per se. I LOVE making strawberry orange banana smoothies. I take some ice and some frozen orange juice and a little water and grind it all up in a blender, I then add fresh or frozen strawberries and fresh bananas until I am happy with the color/amount/flavor. If there are any other fruits on hand, you can experiment and throw them in.

    Bananas and cinnamon
    very simple yet yummy!
    1 banana cut lengthwise
    sprinkle with cinnamon (a lot!!!), drizzle with honey, sprinkle with chopped nuts of your choice
    put in 350 deg oven until all the toppings melt and the nuts are brown (around 25min)
    I moved twice and ovens were different so experiment!!
    top this with whip cream and MORE cinnamon==or chocolate shavings/
    low cal but decadent!

    My favorite is Banana Bread:

    1 3/4 cups flour
    3/4 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 cup smushed banana (usually two bananas; use three for more gooeyness)
    1/3 cup margarine
    2 eggs

    Add dry ingredients together (mix each ingredient in as you add for better consistency), but leave out 1 cup of flour. Add banana. Add margarine. Add eggs. Add in rest of flour. Grease bread pan then add batter.

    Bake at 350 degrees F on the center rack in oven for 50-60m or until you can stick a knive, or other narrow metal object, in and have it come out ‘dry’ (time can vary a lot per oven). Let cool then take out. Eat whenever.

    Most recipes call for salt. I leave it out. It adds nothing but blood pressure points.
